She married Robert Knott of Hesston on February 6, 1949 at the United Church of Christ in rural Hesston. They had three children, Larry, Ronnie and Penny.
Edie was a dedicated farm wife and doting mother and nana. Bob and Edie hosted a tremendous number of sleepovers for their grandchildren where many lasting memories were made. She and her sister-in law, Pearl Johnston opened a restaurant in Bob and Edie’s home named the Farm House. They had guests travel from all over the state of Kansas to taste their home cooked meal of brisket and grits. Husbands Bob and Alvin helped in the kitchen.
Edie became an accomplished quilter after her children were grown and gifted hundreds and hundreds of quilts over the years to friends, family and people in need. She continued her love for sewing up until a few months before her death, making pillows for the residents at Paramount.
